Yankee Gardener Recipes
Yankee Gardener's Fresh Garden Rhubarb Cobbler
4 cups fresh picked rhubarb from your garden. Very easy to grow and lasts for years.
1 cup fresh all purpose flour
3/4 cup regular oatmeal (Option Use Old Fashion Oatmeal)
1 teaspoon freshly ground cinnamon
1 cup brown granulated sugar
3/4 cup fresh butter
1 cup white granulated sugar (Option Use Vanilla Sugar)
1 1/4 cups water
3 Tablespoons cornstarch
1 teaspoon fresh vanilla extract
Fresh Vanilla Ice Cream
Fresh Whipping Cream
Fresh Chopped Walnuts
Jar of cherries
Remove large green leaves and wash rhubarb. Slice rhubarb into pieces approx. 1/2 inch long. In a mixing bowl, combine flour, oatmeal, cinnamon, and brown sugar. In a separate saucepan, melt butter and add to the mixture. Mix well. Press half the mixture into the bottom of an 8" x 8" baking pan. In a medium saucepan, cook the sugar, water, cornstarch, and vanilla over low heat until it becomes a thick sauce. Preheat your oven to 350°. Add the rhubarb to the thick sauce and mix thoroughly. Spread the sauce mixture into the baking pan and top with remaining flour mixture. Bake for 1 hour.
Serve warm with freshly opened vanilla ice cream, whipped cream, and topped with chopped nuts and a cherry. Anyway you like to serve this cobbler, its great!Return to Yankee Gardener Recipe Main Page
