Yankee Gardener Recipes
Yankee Gardener's Salad Minestrone with Tuna
Serves 4 to 8
2 pounds potatoes, cooked, sliced
2 cups green beans, cooked, cut
1 cup artichoke hearts
1/2 cup medium black olives
1 red onion, sliced
18 ounces tuna fish in oil, drained
1 pint cherry tomatoes
6 eggs, hard-boiled, sliced
1/2 red pepper, cut in strips
1 green pepper, large, sliced
4 ounces anchovies around capers
2 cups olive oil
1/2 cup vinegar
1/4 cup lemon juice
1 teaspoon tarragon
1 Tablespoon dry mustard
1 teaspoon sugar
1/2 teaspoon pepper
2 teaspoons salt
2 cloves garlic, crushed
4 cups fresh lettuce
To prepare the dressing: Combine mustard, tarragon, sugar, salt and pepper. Blend in garlic. Add vinegar, lemon juice. Stir in oil and mix. Marinate potatoes, green beans, artichoke hearts and onion in the dressing in refrigerator for several hours, gently stirring a few times. To serve, arrange lettuce greens on individual serving plates and place the marinated vegetables on them. Pile tuna in the middle of each serving, arrange the olives, tomatoes, eggs, peppers, and anchovies around. Drizzle dressing over each salad just before serving. Serve with french bread.
