Yankee Gardener Recipes
Julia's Roasted Carrots and Parsnips
Serves 6 to 8. There will be no leftovers.
6 to 7 fresh pulled garden parsnips.
HINT: Pull parsnips after the first heavy frost. They turn sweet.
6 to 7 fresh pulled garden carrots. Save the Carrot Tops.
3 tablespoons olive oil.
2 1/4 teaspoons of garlic powder. Season each roasting pan with a 1/4 teaspoon.
Salt, plain or Iodized to taste.
Freshly ground pepper, to taste.
Preheat your oven to 425°F.
- Wash, and peel the parsnips. Cut into 2 inch long sticks, each about 1/4 inch thick.
- Wash, and peel the carrots. Cut into 2 inch long sticks, each about 1/4 inch thick.
- Divide the parsnips and carrots between 2 shallow baking pans.
- Toss each pan of vegetables with 1 1/2 tablespoons olive oil.
- Spread vegetables in one layer and season each pan with garlic powder, salt and pepper.
- Roast vegetables in the preheated oven, switching positions of the pans, halfway through the baking process.
- Occasionally stir the roasting vegetables.
- Roast the vegetables about 20 to 25 minutes, or until browned and just crisp. Do not burn...!
Garnish with the saved carrot tops. Serve to waiting guests. Hmmm... good.
