Yankee Gardener Recipes
Kathy's Marinated Brussels Sprouts with Mushrooms
Makes about 5 cups
1 lb. small Brussels sprouts
1 lb. small mushrooms
1/4 cup olive oil
1/2 cup fresh lemon juice
1 cup water
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
4 cloves of garlic, minced
1 bay leaf, whole
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon thyme
1 Tablespoon fresh parsley, chopped
Trim and wash the Brussels sprouts and steam them until just tender. Cool slightly, then cut off the tip of each sprout. Place them in a large bowl. Clean and stem the mushrooms. Place the caps in the bowl along with the Brussels sprouts. Put the remaining ingredients in a small saucepan and bring to a boil. Pour over the vegetables. Mix all gently. Once the marinade has cooled, cover, and refrigerate for at least 2 hours. Once you taste this, you will not have any left. If you do, this dish lasts for up to 2 days in the refrigerator.Return to Yankee Gardener Recipe Main Page
