Black Beauty Eggplant is a vigorous grower that will produce 4 to 6 fruit on plants that grow 24 to 30 inches tall. The mild flavored fruits are very dark purple, smooth, glossy uniform, excellent for slicing or stuffing. Eggplant is used in many Italian main and side dishes.

SOWING ... Start eggplant seed indoors 6 to 8 weeks before danger of frost is past. Plant eggplant seed 1 inch apart and cover with 1/2 inch of fine soil, well pressed down. Place seed starting tray in a very warm spot (both night and day) and cover with frame of glass or clear plastic to preserve the moisture until germination is complete. Then place the seed tray in warm sunny window.

THINNING ... When eggplant plants are 2 to 3 inches tall, transplant 2 inches apart in another tray. After danger of frost is past, transplant outdoors in rows 2 to 3 feet apart, spacing plants 2 feet apart in the row.

GERMINATION ... Black Beauty (Melanzana) Eggplant seed germinates in 10 to 14 days depending on soil and temperature conditions.

REMARKS ... Eggplant requires warm weather for best results so it is best not to set them out too early. Maintain good fertility during the eggplant growing season. Cut the ripe eggplant instead of pulling from plant to avoid plant injury.

CLASSIC ITALIAN EGGPLANT: This eggplant variety dates back to the 1850's in America. Long Purple Eggplant is a Classic Italian eggplant. Plants produce good yields of 10 inch long, dark purple, club shaped fruit, which are 2 inches in diameter. Plants are hardy and will yield well in the North where the growing season is long enough.

SOWING ... Start the Long Purple eggplant seed indoors 6 to 8 weeks before danger of frost is past. Plant seed 1 inch apart and cover with 1/2 inch of fine soil, well pressed down. HEIRLOOM VARIETY: A European delicacy, Chicory Witloof, Belgian Endive is now very popular in America and this Heirloom variety is well suited for home garden production. Sweet and delicious, they are a welcome addition to any garden. Grow all season to produce sturdy roots. After tops die back in fall or winter, dig entire tap root and replant in moist soil deep enough to just cover the top of the root. Belgian Endive is excellent raw or lightly cooked.

SOWING ... Sow Chicory Witloof seed in early spring after danger of frost is past. Plant seed thinly in rows 24 inches apart.

THINNING ... Thin Chicory Witloof to 12 inches apart when plants are 2 inches tall.

GERMINATION ... Chicory Witloof seed germinates in 6 to 10 days depending on soil and weather conditions.

REMARKS ... Sturdy roots are essential to produce top quality chicons (Belgian Endive). Use deeply dug fertile soil. The leaves form a loose head similar to lettuce and should be left on throughout the season. When replanting roots for the winter, a black trash bag with holes punched in makes a good container. Tie off bag and store roots at 65 to 70 degrees F., periodically checking for soil moisture and growth. Harvest chicons when 4 to 8 inches long by cutting off just above the roots. Leave roots in place for possible second crop.

Broad-leaf Batavian Endive (Escarole) is a favorite salad variety with wide, wavy leaves with cut, irregular edges. Inner leaves blanch nicely to a creamy white. While this variety can be blanched and eaten as a salad green, it usually is cooked like spinach or is used for flavoring soups, stews and sauces. Broad-leaf Batavian Endive (Escarole) is the best variety for salads.

SOWING ... Plant Endive (Escarole) seed outdoors as soon as soil can be worked. Plant in rows 18 inches apart, spacing seed 1 inch apart in the row. Cover seed with 1/4 inch of fine soil, well pressed down. Keep soil moist until seeds start to grow. Broad-leaf Batavian Endive (Escarole) may be planted as late as mid June.

THINNING ... When plants are 3 to 4 inches tall, thin or transplant, 10 to 12 inches apart in the row.

GERMINATION ... Endive (Escarole) seed germinates in 7 to 14 days depending on soil and weather conditions.

REMARKS ... Broad-leaf Batavian Endive (Escarole) is rich in vitamin A and vitamin C. Blanch by tying outer leaves together, three weeks before harvest.

SALAD GREENS: Green Curled Endive is a gourmet salad green that is often found in mesculuns where it adds a sharper flavor. Usually grown as a salad green, it may also be cooked and served with a sauce or grated cheese. Green Curled Endive leaves are finely cut, rich green blanching to a creamy white near the center.

SOWING ... Plant endive seed outdoors as soon as the ground can be worked, seedlings are frost tolerant. Plant in rows 18 inches apart, spacing seed 1 inch apart in the row. Cover endive seed with 1/4 inch of fine soil, well pressed down. Keep soil moist until seeds start to grow. For continuous endive supply, repeat endive plantings every week through mid-summer.

THINNING ... When endive plants are 2-3 inches tall, thin or transplant, 12 inches apart in the row.

GERMINATION ... Green Curled Endive seed germinates in 7 to 14 days depending on soil and weather conditions.

REMARKS ... To blanch center leaves, tie outer leaves together 2 to 3 weeks before harvest. Tastiest crops are timed for harvest during cool fall weather. Hart's Birdhouse gourds (also known as dipper gourds) are easy to grow on fences or trellises. Once dried, these Birdhouse gourds make ideal homes for many kinds of birds. See REMARKS section below for more helpful information.

SOWING ... Plant Birdhouse gourd seed outdoors in a sunny location after danger of frost is past or start indoors 4 to 6 weeks earlier. Make a group of 4 to 6 seeds placed in a ring about 2 inches across; cover gourd seed with 1/2 inch of fine soil, well pressed down. Each ring of seeds is called a hill and hills should be spaced 6 to 8 feet apart each way. While they can be planted in hills, like squash and pumpkins, best results are obtained when the plants are supported in a row.

THINNING ... When Birdhouse gourd plants are 2 to 3 inches tall, thin, leaving 3 or 4 strongest plants in each hill. When planted in a row, thin to 12 - 16 inches apart.

GERMINATION ... Birdhouse gourd seed germinates in 10 to 15 days depending on soil and temperature conditions.

REMARKS ... Birdhouse gourds may also be planted in rows 6 to 8 feet apart spacing plants 1 to 2 feet apart in the row. Cut birdhouse gourds from vines with pruning shears leaving 3 inches of stem. Allow Gourds to remain on vine until fully mature. Gather gourds before frost. Will tolerate a light frost, so allow gourds to dry on the vine as long as possible. They are completely dry when you can hear the seeds rattle inside when shaken. To make a birdhouse, drill a hole 1 to 1 1/2 inches in diameter and a few tiny holes in the bottom of the gourd for drainage. Wax or shellac mature gourds for year round ornaments and table decorations.

EXCELLENT FLAVOR: Dwarf Blue Curled Scotch Kale are low growing compact plants with finely curled blue-green foliage. Dwarf Blue Curled Scotch Kale is a hardy productive variety of excellent flavor, which is prepared like spinach. Kale plants withstand some frost, which improves flavor.

SOWING ... Plant Kale seed outdoors as early in the spring as ground can be worked. For winter use, Kale may be planted as late as mid August. Plant in rows 2 feet apart, spacing seed 4 to 6 inches in the row. Cover seed with 1/4 inch of fine soil.

White Vienna Kohl Rabi is the so-called "stem-turnip" because the turnip like tuber is an enlargement of the stem 1 to 3 inches above the ground. The light green tuberous stem is used the same as turnips, and should be used when 2 to 3 inches in diameter. White Vienna Kohl Rabi flesh is clear white, tender and crisp, not unlike that of cauliflower. Try some in your garden this season.

SOWING ... Plant Kohl Rabi seed outdoors as soon as the soil can be worked. Seeds are usually sown where plants are to stand. Cover seed with 1/4 inch of fine soil, well pressed down. Sow Kohl Rabi in rows 12 to 18 inches apart.

Plant seed in rows 10 inches apart, spacing seed 1 inch apart in the row. Cover leek seed with 1/4 inch of fine soil, well pressed down. Keep soil moist until seeds start to grow.

THINNING ... When leek plants are 3 to 4 inches tall, thin or transplant 4 inches apart in the row.

GERMINATION ... American Flag Leek heirloom seed germinates in 7 to 14 days depending on soil and weather conditions.

REMARKS ... Cultivate and draw up earth well around the leek plants so they are fairly well covered at all times. Water leeks regularly and fertilize every 4 to 6 weeks.
